Navratri Special Lauki Paneer Tikki

1. 1 cup grated bottle gourd
2. 1/2 cup grated paneer

4. 1 green chilli, finely chopped

6. 1/2 tsp KPG black pepper powder
7. Sendha salt
8. A little desi ghee or oil for shallow frying

Preparation:

First, empty the grated bottle gourd of any extra water. Without this crucial step, the tikkis won't bind. Now, put the bottle gourd and paneer in a bowl and mix them with water chestnut flour.
Once that’s done, mix in the green chillies, KPG cumin powder, KPG black pepper powder, and sendha salt. These spices really bring the tikkis to life. The warm, earthy notes of cumin paired with the gentle kick of black pepper create a flavour that feels simple yet perfectly balanced.
Now mix all the ingredients and form them into tiny tikkis. You can add more flour if the mixture seems too mushy.

Cooking:

Heat a little ghee or oil in a pan and place the tikkis in gently. Let them cook on a medium flame, turning them occasionally, until both sides turn nicely golden and crisp. Keep the heat in check too high, and they will brown too quickly on the outside while staying undercooked inside.
