While the festive table is often filled with traditional vrat-friendly dishes, you do not always need an elaborate recipe to make the occasion special. This Easy Makhana Recipe is a wonderful choice when you want something comforting, flavourful and simple to prepare. Makhana, also known as fox nuts or lotus seeds, gives the curry a lovely texture, while a creamy gravy brings everything together beautifully. The best part? • 2 cups makhana
• 2 tablespoons ghee
• 1 teaspoon Cumin
• ½ teaspoon Asafoetida
• ½ teaspoon KPG Turmeric
• 1 teaspoon KPG Coriander Powder
• ½ teaspoon KPG Red Chilli Powder
• ½ teaspoon KPG Garam Masala
• 2 medium tomatoes, pureed
• ½ cup fresh yoghurt, whisked
• 1 teaspoon grated ginger
• 1 green chilli, finely chopped
• ½ teaspoon rock salt, or according to taste
• 1 cup water
• Fresh coriander leaves for garnishing
1. Roast the Makhana
Heat a dry pan over medium-low heat and add the makhana. Roast them for around 5–7 minutes, stirring regularly, until they become crisp. You should be able to crush one easily between your fingers.
Remove them from the pan and keep them aside.
2. Prepare the Base
Heat ghee in the same pan. Add Cumin and let it crackle gently. Add ginger, green chilli and Asafoetida, then sauté for a few seconds.
Pour in the tomato puree and cook until it thickens and the ghee begins to separate from the mixture.
3. Add the Spices
Lower the heat and add KPG Turmeric, KPG Coriander Powder and KPG Red Chilli Powder. Stir everything together so that the spices blend evenly into the tomato base.
For a well-rounded festive flavour, add KPG Garam Masala towards the end of cooking the gravy.
4. Make It Creamy
Lower the flame completely before adding the whisked yoghurt. Stir continuously to prevent it from splitting.
Once the yoghurt has blended into the gravy, gradually add water and season with rock salt. Let the curry simmer for 3–4 minutes.
5. Add the Makhana
Now add the roasted makhana to the gravy and mix gently. Allow the curry to simmer for another 2–3 minutes so that the makhana absorbs the flavours without becoming too soft.
If you prefer a slightly thinner curry, add a little more water and adjust the seasoning.
The key to a delicious makhana curry is roasting the makhana properly. They should be crisp before going into the gravy, as this helps them retain a pleasant bite. You can also adjust the consistency according to your preference. For a richer curry, use a little more yoghurt or ghee. If you enjoy a stronger kick, increase the amount of chilli powder to suit your taste. Most importantly, add the makhana towards the end. This keeps the texture enjoyable instead of allowing the fox nuts to turn overly soft.
Serve this festive curry warm with vrat-friendly puris, kuttu rotis or a side of yoghurt. A sprinkle of freshly chopped coriander on top adds a fresh finishing touch.
