Masaledar Paneer Bhurji Recipe with KPG Special Garam Masala

This recipe is quick to prepare and perfect for a weeknight dinner, a hearty breakfast, or a delightful side dish.
Yields: 2-3 servings
Prep time: 10 minutes
Cook time: 15-20 minutes

Ingredients:
• 200g paneer (Indian cottage cheese), crumbled or grated
• 2 tbsp oil or ghee
• 1 large onion, finely chopped
• 1 tsp ginger-garlic paste
• 1 green chili, finely chopped (adjust to your spice preference)
• 1 large tomato, finely chopped
• ½ tsp KPG Turmeric Powder
• 1 tsp KPG Coriander Powder
• ½ tsp KPG Red Chili Powder (adjust to your spice preference)
• 1 tsp KPG Garam Masala
• ¼ tsp KPG cumin powder (optional)
• Salt to taste
• 2-3 tbsp fresh coriander leaves, chopped, for garnish
• 1-2 tbsp water (if needed, to prevent sticking)

Instructions:
1. Prepare the Paneer:
Gently crumble or grate the paneer and set aside. Avoid pressing it too hard, as it can make it chewy.

2. Sauté Aromatics:
1. Heat oil or ghee in a pan or kadai over medium heat.
2. Add the finely chopped onions and sauté until they turn translucent and light golden brown. This takes about 5-7 minutes.
3. Add ginger-garlic paste and chopped green chili. Sauté for another minute until the raw aroma disappears.

3. Add Tomatoes and Spices:
1. Add the finely chopped tomatoes to the pan. Cook until they soften and release their juices, and the oil starts to separate from the mixture (about 3-5 minutes).
2. Now, add the dry spices: turmeric powder, coriander powder, red chili powder, and cumin powder (if using).
3. Mix well and cook for 1-2 minutes, stirring continuously, until the spices are fragrant. If the mixture seems too dry and is sticking to the pan, add a tablespoon or two of water.

4. Incorporate KPG Special Garam Masala:
1. At this stage, add the star ingredient: 1 tsp of KPG Garam Masala.
2. Mix it thoroughly with the cooked masala. Sauté for just 30 seconds to allow its flavours to bloom. The aroma will be incredible!

5. Add Paneer:
1. Add the crumbled or grated paneer to the pan.
2. Gently mix the paneer with the spice mixture, ensuring it's evenly coated. Be careful not to mash the paneer too much.
3. Add salt to taste and continue to cook for another 2-3 minutes, stirring occasionally. You want the paneer to absorb the flavors, but not become dry or hard.

6. Garnish and Serve:
1. Turn off the heat.
2. Garnish generously with fresh chopped coriander leaves.

Serving Suggestions:
Masaledar Paneer Bhurji is incredibly versatile! Serve it hot with: Freshly made rotis or parathas, toasted bread or pav, as a side dish with dal and rice, stuffed in a frankie or wrap for a quick meal.
