Vegetable Pulao is a one-pot wonder packed with aromatic spices, vegetables and fluffy rice; you’re to-go meal for busy days and special occasions alike. For the Rice:
• 1 cup Basmati rice (soaked for 20 minutes)
• 2 cups of water
• 1 tbsp ghee or oil
• KPG whole spices

For the vegetables:
• 1/2 cup chopped carrots
• 1/2 cup green peas
• 1/2 cup chopped beans
• 1 small potato (diced)
• 1 medium onion (sliced)
• 1 medium tomato (chopped)
• 1 green chili (slit)

For Flavouring:
• 1 tsp ginger-garlic paste
• 1/2 tsp KPG Salem Turmeric powder
• 1 tsp KPG Dhaniya powder
• 1/2 tsp KPG Guntur Red Chili powder (optional)
• Salt to taste
• Fresh coriander leaves for garnish

How to cook a perfect pot of happiness?

Step 1: Sauté the Spices
Heat ghee or oil in a large pan or pressure cooker. Add a small pack of KPG Whole Spices range. Sauté until fragrant.

Step 2: Cook the Vegetables
Add sliced onions and sauté until golden brown. Add ginger-garlic paste and cook for another minute. Now, add chopped tomatoes, green chilli, and all the dry spices (turmeric, Dhaniya powder, red chilli powder). Stir well.

Step 3: Add Rice & Water
Toss in the soaked and drained Basmati rice, stirring gently to coat with spices. Add 2 cups of water and salt to taste.

Step 4: Simmer & Cook
Cover and cook on a low flame until the rice is fully cooked and fluffy. If using a pressure cooker, cook for 2 whistles and let the pressure release naturally.

Step 5: Fluff & Serve
Once done, gently fluff the pulao with a fork. Garnish with fresh coriander leaves and serve hot with raita or pickles.
