Ingredients for Aloo Shimla Mirch

• 2 medium-sized potatoes, diced
• 1 large capsicum (Shimla Mirch), chopped into bite-sized pieces
• 1 medium onion, sliced (optional)
• 1–2 green chilies, slit
• 1 tsp cumin seeds
• ½ tsp turmeric powder
• 1 tsp red chili powder (adjust to taste)

• 2–3 tbsp oil

How to Make It

Step 1: Sauté the Basics
Heat oil in a pan. Add cumin seeds and let them crackle. Add sliced onions (if using) and sauté until light golden. Then add green chilies.
Step 2: Cook the Potatoes
Add diced potatoes, turmeric, and salt. Mix well, cover, and cook on low heat for 5–7 minutes until the potatoes are half done. Stir occasionally to prevent sticking.
Step 3: Add the Capsicum
Add the chopped capsicum and mix gently. Cook uncovered for another 5–6 minutes so that the capsicum stays slightly crunchy.
Step 4: Spice It Up
Add red chili powder and KPG Sabji Masala. Mix gently so that the masala coats all the veggies evenly. Cook for 2 more minutes. Turn off the heat and garnish with chopped coriander.
